1.      What cause the colour, aroma, and flavour difference in matcha?

The variations stem primarily from the harvest season of the Tencha leaves. Premium and ceremonial grades are harvested in spring when leaves are young and rich in amino acids, resulting in a vibrant green color and umami flavor. Culinary-grade Tencha is harvested in summer and autumn, yielding larger, darker leaves with higher polyphenol content - leading to a stronger, more bitter taste.


2.      Is ceremonial matcha only available in spring?

Not at all. While ceremonial matcha is made from spring-harvested Tencha, we maintain ample inventory year-round. Orders placed now are fulfilled using our carefully stored Tencha, freshly ground to order.


3.      What organic certifications do you have for organic matcha?

Our organic matcha is certified by USDA Organic and CERES Organic, ensuring the highest standards of organic farming and processing.
